A refreshing twist on a classic dessert!
Bursting with fruity flavor and a cool minty finish, this Strawberry Mint Cake is a perfect treat for special occasions or everyday indulgence. Made with Bella Grain Homebaking Flour, it bakes up soft, moist, and irresistibly fluffy every time.
Ingredients:
2 ½ cups Bella Grain Homebaking Flour
1 tbsp baking powder
½ tsp salt
1 cup sugar
¾ cup butter (softened)
3 eggs
1 tsp vanilla extract
½ cup fresh strawberry puree
½ cup milk
2 tbsp finely chopped fresh mint leaves
Optional: pink or red food coloring
For the frosting (optional):
1 cup whipping cream
2 tbsp icing sugar
Few drops of vanilla
Sliced strawberries and mint leaves for garnish
Instructions:
1. Preheat and Prepare:
Preheat oven to 175°C (350°F).
Grease and flour your cake tin or line with parchment paper.
2. Mix the Dry Ingredients:
In a bowl, whisk together Bella Grain Flour, baking powder, and salt. Set aside.
3. Cream Butter & Sugar:
In another bowl, beat butter and sugar until light and fluffy.
Add eggs one at a time, beating well after each addition.
Stir in vanilla and strawberry puree.
4. Combine and Flavor:
Gradually add the flour mixture and milk to the wet ingredients, alternating between the two.
Fold in the chopped mint and food coloring if using.
5. Bake:
Pour batter into the prepared cake tin.
Bake for 30–35 minutes or until a toothpick comes out clean.
Allow to cool completely before frosting.
6. Frost and Decorate (Optional):
Whip cream with icing sugar and vanilla until stiff peaks form.
Spread over the cooled cake.
Garnish with fresh strawberry slices and mint leaves.
