A true Ugandan favorite!
The Rolex – short for “rolled eggs” – is a delicious street food classic made by rolling an omelet inside a fresh chapati. Quick, filling, and super flavorful, it’s perfect for breakfast, lunch, or even a quick snack on the go.
Ingredients:
1 chapati (made with Bella Grain Homebaking Flour)
2 eggs
1 small tomato (diced)
¼ onion (finely chopped)
½ green pepper (optional, chopped)
Pinch of salt
Pinch of black pepper (optional)
Cooking oil
Instructions:
1. Prepare the Omelet
In a bowl, crack the eggs.
Add chopped onions, tomatoes, green pepper, salt, and pepper.
Beat well to mix.
2. Cook the Omelet
Heat a little oil in a non-stick frying pan over medium heat.
Pour in the egg mixture and spread evenly.
Let it cook until set and lightly golden.
3. Assemble the Rolex
Place a warm chapati over the omelet while still in the pan.
Let it sit for a few seconds, then carefully remove both together.
Roll it up tightly from one end.
4. Serve
Serve hot with a cup of tea or juice.
Add ketchup or chili sauce if desired.

Use fresh chapatis made with Bella Grain Flour for the best stretch and softness.
