Strawberry Mint Cake

A refreshing twist on a classic dessert!
Bursting with fruity flavor and a cool minty finish, this Strawberry Mint Cake is a perfect treat for special occasions or everyday indulgence. Made with Bella Grain Homebaking Flour, it bakes up soft, moist, and irresistibly fluffy every time.


Ingredients:

  • 2 ½ cups Bella Grain Homebaking Flour

  • 1 tbsp baking powder

  • ½ tsp salt

  • 1 cup sugar

  • ¾ cup butter (softened)

  • 3 eggs

  • 1 tsp vanilla extract

  • ½ cup fresh strawberry puree

  • ½ cup milk

  • 2 tbsp finely chopped fresh mint leaves

  • Optional: pink or red food coloring

For the frosting (optional):

  • 1 cup whipping cream

  • 2 tbsp icing sugar

  • Few drops of vanilla

  • Sliced strawberries and mint leaves for garnish


Instructions:

1. Preheat and Prepare:

  • Preheat oven to 175°C (350°F).

  • Grease and flour your cake tin or line with parchment paper.

2. Mix the Dry Ingredients:

  • In a bowl, whisk together Bella Grain Flour, baking powder, and salt. Set aside.

3. Cream Butter & Sugar:

  • In another bowl, beat butter and sugar until light and fluffy.

  • Add eggs one at a time, beating well after each addition.

  • Stir in vanilla and strawberry puree.

4. Combine and Flavor:

  • Gradually add the flour mixture and milk to the wet ingredients, alternating between the two.

  • Fold in the chopped mint and food coloring if using.

5. Bake:

  • Pour batter into the prepared cake tin.

  • Bake for 30–35 minutes or until a toothpick comes out clean.

  • Allow to cool completely before frosting.

6. Frost and Decorate (Optional):

  • Whip cream with icing sugar and vanilla until stiff peaks form.

  • Spread over the cooled cake.

  • Garnish with fresh strawberry slices and mint leaves.

  • Best enjoyed chilled with a glass of fresh juice or tea!
